The world of rum cocktails can feel a bit much. Between the specialised tools and the fifteen-ingredient recipes, it is easy to feel like you are doing it wrong.
But, we believe the best drink is the one in your hand, made simply. You don’t need a home bar that looks like a laboratory; you just need to understand the physics of a good pour.
Here is the honest advice we give our friends.

Ice is an Ingredient, Not a Garnish
Most people do not use enough ice.
A few cubes might look neat. But, when you use three lonely cubes, they melt quickly and water down your drink before you’ve even started. The problem isn’t the ice itself, it’s insufficient ice.
Fill your glass to the brim as it works differently. The more ice you have, the colder the drink stays, and ironically, the less it dilutes over time and stabilises the temperature. Cold liquid melts ice slower than warm liquid exposed to a few scattered cubes. So don’t be delicate with it. Fill the glass properly. Ice isn’t decoration, it is part of how the drink behaves.
Measure, Don’t Guess
Professional bartenders use jiggers for a reason: consistency.
You do not need specialist tools. A shot glass or even a small measuring cup is enough. What matters is repeating the same ratios, not the instrument you use.
Without measuring, every drink becomes a different outcome. One too sweet, one too sharp, one just off without a clear reason why. Following the measures removes the guesswork. You can finally get a drink you can actually repeat and then improve.

The Power of Four
Most great rum cocktails follows this simple structure: 2 parts Spirit + 1 part Sour + 1 part Sweet = balance
2 parts Spirit for structure and strength, 1 part Sour (Lime or Lemon) for sharpness and lift and 1 part Sweet (Sugar syrup or honey) for balance and softness.
This is the sour template and it sits behind drinks like Daiquiris, Whiskey Sours and countless modern rum cocktails. It balances three forces that would otherwise fight each other. Spirit gives weight. Citrus cuts through it. Sugar smoothens the edges.
When they are in proportion, none of them take over. This isn’t a strict recipes, it’s a baseline. Once you understand it, you can adjust with intention. For example: more citrus for brightness, more sweetness for roundness, more spirit for strength. But, the structure stays the same, making it reliable.
Fresh Juice is Worth the Effort
If there is one step that genuinely changes the result, it’s fresh citrus juice. Bottled juice is serviceable but lacks freshness, aroma and brightness. The difference isn’t just acidity. It’s the lift you get from fresh citrus oils. That sharp, immediate flavour is what makes a drink feel alive rather than just mixed. If you do nothing else properly, do this one thing properly.

Cloudy vs Clear: Shake or Stir
This is about texture. Start with one question: what are you mixing?
Shake if your drink contains citrus juice, or syrup/honey i.e anything that needs dissolving or “blended together”. Shaking chills quickly, integrates ingredients & adds air. It creates a lighter, slightly frothy texture that works with citrus-based drinks.
Shake hard for 10-15 seconds until the tin is properly cold.
Stir if the drink is spirit-only or built with clear modifiers liker vermouth or liqueurs. Stirring chills without aeration. It preserves a smooth, dense texture and keeps the drink crystal clear.
In the glass, stir slowly over ice for 20-30 seconds.
Respect the Bubbles.
Carbonation does not forgive mistakes. For classics like a Spiced Rum and Ginger, never shake the mixer. Shaking destroys carbonation instantly, leaving you with a flat, heavy drink instead of something bright and refreshing.
Instead, build the drink directly in the glass over ice, adding the ginger beer or soda last. Then, give it one single, gentle stir with a spoon to combine and keep the fizz alive.

Glassware Does Not Change the Flavour
Do not worry if you do not have a copper mug or a crystal coupe. They do not impact flavour. What matters is temperature, balance and proportion, not the vessel. A clean jar or a sturdy tumbler works perfectly.
Glassware might change how a drink feels or how quickly you sip it, but it doesn’t change what’s insider. Don’t let presentation block progress. Focus on what is inside the glass.
Master the Basics.
For a perfect drink you do not need complexity. They come from control. You need a drink that is balanced, cold and in your hand. Grab a bottle, find some ice and don’t overthink the glass.
